On this type of “gravel” soil, it is important to maintain a balance so that the vines do not suffer from the moods of the weather (drought, heavy rain). This balance is obtained by low inputs of organic manure each winter with tillage; controlled weeding (grass with its natural flora) better controls the vigor of the vine to produce more typical wines.

The harvest is exclusively manual and when we reach optimum maturity. Our goal is to harvest grapes of perfect quality. Thus, we practice thinning and stripping, so that the bunch benefits from as much sunshine as possible.

Vinification is “natural” (in native yeasts) and carried out in stainless steel vats. Fermentation is carried out at low temperature (15-17° C) in order to preserve the lovely fruit aromas. Aging takes place in stainless steel vats on fine lees for 12 months. The micro-oxygenation refines the tannins and eliminates fermentation aromas to give way to more fruity aromas. Finally, in the bottle, its bouquet develops and expresses itself fully.

Les Clos des Quarterons is first and foremost a team, from mixed origins with mixed and complementary skills and personalities. Together they seek to produce wines that reflect a sense of place and typicity. They observe, experiment and challenge their beliefs to produce sustainability. They not only want to produce good wine but preserve and protect nature for the future.
