We were delighted to be asked by the team at The Silver Birch to pair wines for their fantastic New Year’s Feast menu, what better way to see in the new year and say goodbye to 2020!

We have chosen the following wines to match with the corresponding courses, and hope they elevate your experience of the Restaurant’s incredible menu.

Aperitif and Cheese Puff:

Champagne Gallimard, Cuvee Reserve Blanc de Noirs NV
Didier Gallimard is a small, independent grower with 10 hectares of prime vineyards on the steep slopes surrounding Les Riceys in the Aube. Light gold in colour, with a bouquet of citrus and tropical fruits, which translate into supple, aromatic flavours on the palate.

Croquette and Fennel:

Cantina Terlano, Terlaner Cuvee 2019
A composition of Terlano's three most traditional white varieties, namely Pinot Bianco, Chardonnay and Sauvignon. Pinot Bianco, as the main variety used in the cuvée, provides the freshness and a good acid structure, while Chardonnay delivers a pleasing texture and Sauvignon adds the fine aromatic character.

Duck or Monkfish:

Avignonesi, Vino Nobile di Montepulciano 2016
Garnet in colour, with delicate perfumes of plums and hints of violet on the nose. On the palate, it has good intensity of spicy fruit with wonderful balance, depth and supple tannins. A very elegant rendition of Sangiovese.

Chocolate cake:

Chambers Rosewood, Rutherglen Muscat NV - Half Bottle
This is an example of the lightest, freshest and most accessible style of Aussie liqueur Muscats, and is tawny red in colour with aromas of rose petals, raisins and dried fruit. These characters carry through to the palate, balanced with fresh acidity and a rich texture.
