The Black Canvas, Escaroth Chardonnay, Marlboroughis the first vintage of a single vineyard - now exclusively replanted to Dijon clone 95. Made with 30 percent new oak, it is rich and expressive in style lined with a touch of butter. Lees stirring gives additional complexity and adds a savoury note. All this is cut by a refreshing lemony and lemon rind type of acidity. Toasty on the palate it has a mineral, oyster shell finish. The wine is still on the young side, but decanted it is excellent with food. A Burgundian counterpart for sure, which represents good value for the quality of viticulture.

The Escaroth single vineyard has some of the oldest soils in the region consisting of very low-vigour clay soils, which are perfect for low yielding Pinot Noir. The north-facing slope means excellent exposure to the sun in an area that has a greater diurnal range than the main Wairau Valley. The vineyard is dry-farmed and everything is done by hand - this is because of the hillside nature of the site being adverse to machinery! Wild fermentation, zero battonage, natural malolactic fermentation and a mixed format oak regime (barriques, 30% new). Black Canvast adheres to maintaining a minimalist philosophy, they bottle the Escaroth Chardonnay without filtration.
