The grapes are sourced from their 17ha of vineyards in the Canelones region of Uruguay. It is located next to the coast, where the River Plate estuary meets the Atlantic Ocean. Soils are calcareous white and brown clays. Minimal intervention viticulture is practised with no insecticide and the vineyard is dry, no-till farmed. Hand harvested grapes are fermented for 5 days at 34°C with daily pump over. 30% of the wine aged for 12 months in new French oak.
The winemaker, Pablo Fallabrino, a laid back good natured surfer, is the perfect catalyst to create a world class winery. His approach is not to over think the winemaking process; instead, he runs with his instincts, takes chances and makes extraordinary wines with his own personal signature. This region provides clean cool ocean breezes and an ideal climate for the maturation of wine grapes. With only 16 hectares, they practice sustainable agriculture with no insecticides and only a very low grade fungicide to control downy mildew.
