Pollen 2014 is made from the fruit of a single, 400-year-old Herefordshire apple farm. Based on the classic bitter-sweet Dabinett cider apple and including various other varieties from Brown’s to the little known ‘Dous-moyene’. All were farmed without the routine use of chemical pesticides, herbicides, or fertilizers and much of the fruit is from an untouched field blend of old, standard trees. Made in the ‘traditional method’, this cider has had a second fermentation in the bottle as per Champagne but is sold with the sediment that allows it to continue developing in flavour as it ages further.
Pollen was conceived foremost as an exploration in blending cider apple varieties that was first conducted on a very small scale by our founder, Ben Slater in a back garden in south London in October 2013. The apples for that first batch were sourced from a tiny, domestic orchard in Somerset and the blend was carefully chosen to give fresh acidity with a hint of green apple but retain the spicy, bittersweet notes of traditional cider varieties. Over the years we have gradually expanded our range and continue to seek out exceptional fruit in an effort to lead the quality of this historic British drink.
