Deep garnet-coloured with purple reflections, the 2015 Esprit de Pavie is a juicy and rich red that first unfolds flavours of red and black plums, hints of baking spices, vanilla, dark chocolate and dried Mediterranean herbs, to be accompanied later by black truffle, blackberry and other red an dark fruits. The wine is rather full-bodied, has pleasantly chewy tannins and a refreshing lift on the finish. The Esprit de Pavie is a blend of vines from the Cotes de Castillon and young vines from Pavie and Monbousquet.
The Esprit de Pavie, Bordeaux Superieur 2015 comes from the finest terroirs of gravel, clay and clay-limestone soils situated on Dordogne Valley hillsides with full southern exposure. The vines are worked with a minimum of chemical treatments. Green harvests are made, and a first leaf-thinning on the eastern side of the vines at the end of June is followed by a second thinning on the vines' western side towards mid-August. Alcoholic fermentation begins naturally in temperature-controlled tanks. After several weeks of vatting, malolactic fermentation is made in tank. The wines are aged during 15 months in barrels, which have already been used once for Chateau Pavie and Chateau Monbousquet.
