A very special fino indeed, the solera for this wine was started in 1961. The very best barrels of the Emilio Hidalgo basic fino are added to this smaller solera system. Great care is taken to pay attention to the temperature and humidity for this solera such that the flor on the wine lives for 15 years - the average age of the wine in bottle. This is bottled with only light filtration. Highly complex compared to a standard fino sherry and with a deeper, darker colour and richer, earthier flavours.
