They under vine cultivate instead of using any herbicides and are working to convert the whole vineyard to organic methods. The grapes for this Shiraz were hand harvested, destemmed and fermented with indigenous yeasts in open top, stainless steel tanks. Then matured in old Puncheon barrels for 6 months, racked into tank and bottled with no filtration, no fining and just a small amount of sulphur.
Xavier Goodridge is at the vanguard of the natural wine movement in Victoria. A Bendigo boy he has found is home in Gippsland where he farms a couple of hectares of Pinot Noir and Chardonnay. He also sources fruit from around Victoria for his range of superbly drinkable, fresh, lo-fi wines. A name to watch, and not just because X marks the spot of a great winemaker.
