30 year old, minimally pruned Sauvignon blanc from the Eisenhut vineyard. Hand harvested, Destemmed, spontaneously fermented on skins for 9 days, twice daily punchdowns by hand, very gently pressed into a 4th year French oak 600L barrel, 100% malolatic fermentation, unfiltered, unfined.
40 year old Riesling from the Altweingarten vineyard. Whole bunch pressed and spontaneously fermented in stainless steel, 100% malolactic fermentation, unfiltered, unfined.
40 year old Grüner Veltliner from the Altweingarten vineyard. Hand harvested, Destemmed, spontaneously fermented on skins for 9 days, softly pressed into 8th fill 500L acacia barrels, 100% malolactic ferment. Unfined, unfiltered.
