Description

This old vine Shiraz has been co-fermented with a little Zibibbo (Muscat) and the result is fantastic. The nose is of stone fruit and delicate raspberry. The profile of the palate is lovely and silky with enough tannins to tease. There is a baked strawberry with a lovely dash of crushed black peppercorn.

A small proportion of Zibibbo, otherwise known as Muscat, was co-fermented using wild yeasts. A short ageing in old French oak followed by bottling young to preserve the hugely aromatic, textural deliciousness that we sought from the outset. Short aging in 100% French Oak
