The ages of the vineyards range between 25 and 103 years old, situated at altitudes ranging between 760 and 970 metres. The various plots are also home to different soils, sandy, clay and chalky. The harvest is carried out manually, using small 15kg capacity boxes to ensure that the grapes are not broken or damaged. After the grapes have been destemmed, the grapes pass through vibrating table for grape selection, which uses an air-jet sorting system to remove grapes of unsuitable size or weight. Alcoholic fermentation is then carried out in 25,000kg capacity stainless steel tanks with an automatic temperature control system. The processes of plunging of the cap, pumping over and racking and return of the wine are constant throughout the winemaking process. The wine is then aged for 3 months in 500l French oak barrels.  Following a brief resting period in the bottle, the wine is placed onto the market.

The Convento San Francisco winery was founded in 1998. It is housed within the 13th century remains of the San Francisco convent in Penafiel at the heart of the D.O. Ribera del Duero. Full advantage has been taken of old buildings that have stood the test of time, by renovating them to create century-old spaces for the production of fine wine. Full respect is given to the region’s ancient wine-making traditions while at the same time incorporating new technology into the production process. Starting from the principal that no two harvests are the same, we aim to interpret each harvest individually in order to achieve the best expression of the grapes. The result is pleasant wines with personality that are capable of satisfying experts as well as current-day lovers of fine wine.
