The fruit was picked in the cool of the night, processed using the destemmer only (no crusher), to stainless steel fermenters, inoculated for primary ferment pumped over 3 times per day and left on skins for 10 days. Malolactic fermentation during primary ferment. Matured in French oak barriques, 10% new.
