The Collio Bianco 'Ca' Savorgnan' by Mitja Sirk is a wine with personality that comes from a small, historic vineyard, populated by vines over 80 years old. The vineyard lies on soils rich in typical 'ponca' - a layered mix of marl (a clay-like substance) and sandstone, containing marine fossils. This allows the grapes reach perfect ripeness while maintaining a surprising freshness. Intriguing hints of fresh fruit dominate the nose, along with herbaceous hints that introduce the typical almondy finish. Distinctly savoury, warm and full-bodied.

In the vineyard, Mitja excludes the use of herbicides, pesticides and other synthetic chemical products, while the harvest is carried out entirely by hand. In the cellar, the bunches undergo soft pressing, followed by spontaneous alcoholic fermentation of the must in used tonneaux, the same type of wine containers where the liquid matures for 8 months on the fine lees before final bottling. The wine is finally marketed after a further 12 months in bottle.

Mitja Sirk is one of Italy’s top sommeliers, working at the Michelin-starred Trattoria al Cacciatore, part of La Subida eco hotel, his family’s business in Cormòns, Friuli. Good friends of winemaking legend Josko Gravner, Mitja began making wine under his stewardship at just 11 years old. He works organically, taking huge care of the 8 vineyards on 7 hills (four in Collio and Collio Orientali, and four in Brda, Slovenia, totalling 4.5 hectares, vinified separately. Three of the vineyards were well known for their quality 30 to 40 years ago, one being Ca’Savorgnan, which is bottled separately. Mitja is carefully bringing them back to life.
