The grapes are harvested by hand at perfect maturity, in order to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out when picking and receiving the grapes. After sorting takes place the must is kept under neutral gas in order to minimise risks of oxidation. The grapes are destemmed, cooled to 8 ° C and sent directly to the press. Particular attention is paid during pressing in order to keep only the first, most high-quality juices. The juices are then more or less settled and the fermentation takes place at low temperature. The wine is then aged on fine lees in stainless steel tanks.

The Master Winemakers of the Saint-Tropez peninsula are official partners of the event of Sails of Saint-Tropez. Rigorously selected juices, packaged in a chic and relaxed bottle, just like Sails (Les Voiles).
