The vinification process is in the best sense of the word traditional. Only one cuvée of red and of white Chateauneuf du Pape are made. The grapes for the reds have for the greatest part since 1991 been destemmed. The cellar of the domain is situated by the route from Chateauneuf du Pape to Courthezon. Aged for 6 months in cement tank and then for around 12 months in foudres.
The domain was founded by the father of Lucien Michel, Marcel Michel, who did the first bottling at his domain in 1966. From 1979 Marie José and Lucien Michel have successfully ran the property. The next generation Claire Fabre has took up the reigns in 2008 and since has had the responsibility for the winemaking. She is married to another winegrower Adrien Fabre Domaine la Florane in Visan. In 2013 Claire's brother François joined her at the domain, and the two of them became officially responsible for the property together with their mother Marie Michel. The domain covers 15 ha of Chateauneuf du Pape, one of them with white varieties.
