Hasher Family Wines, Fat Lady Sauvignon Blanc 2022

Vineyard site is predominantly on a west to southwest facing slope at 203m above sea level approximately 5.19km from the cool South Atlantic Ocean. Registered as Single Vineyard. The grapes were chilled to 10°C overnight in a cold room and processed the next morning. Hand sorted and destemmed before a gentle 3h pressing cycle. Juice settled for 48h in T7.
Total yield = 4800L (675L/ton). After fermenting the wine in T7, it was left for 3 weeks on the fermentation lees before racked with some healthy fine lees to T19 and 10 x 225L old French oak barrels to mature for 4 months.

​Frederik and Céline acquired their 180-hectare farm (nearly a third dedicated to wildlife & nature conservation) on the banks of the Onrus river in the stunning Upper Hemel-en-Aarde Valley, close to Hermanus, in 2021. Their energy and passion, combined with winemaker Walter Pretorious’ skilled efforts in the cellar, have already garnered rave reviews. An ambitious replanting programme aims to unlock the farm’s full potential, sited as it is on the area’s notable decomposed gravel and shale soils but with a distinctively rich presence of clay that sets the fruit and the wines apart. In keeping with the region’s reputation, Chardonnay and Pinot Noir hit the high notes and Hasher can already be considered one of the valley’s leading sources of the best the country has to offer.
