The winemaking process uses gentle, minimal extraction techniques to prevent the high alcohol and over-ripeness that can occur with grapes in warmer climates.

The grapes are hand-harvested and chilled for 24 hours at the winery. A 100% whole-cluster fermentation is carried out, with the grapes foot-trodden and only wild yeast is used. Extraction is very gentle. The wine is aged in old French oak barrels for 11 months before bottling, with no fining or filtering. A very limited amount of sulfur dioxide is added.

A lover of Loire Valley Cabernet Franc, Johan set out to create an elegant, perfumed rendition of the grape, unlike the high-alcohol Bordeaux blends typically found in South Africa. He’s done just that, with heaps of crunchy red fruit, subtle herbal undertones, and ripe tannins tying it all together. Very minimal extraction is carried out in the winery. From a regeneratively farmed vineyard just two kilometres from the Atlantic coast, this is a wine that’s already at ease with itself, with a silky structure and none of the greenness sometimes found in cooler climates.
