On arrival in the vat room, the hand-harvested grapes are sorted on the table then pressed slowly and delicately into whole bunches. The must (grape juice) is then barreled into oak barrels to carry out fermentation. It will remain there for between 12 and 18 months: this is the aging phase which will bring roundness and complexity to the wine. Fermentations are spontaneous, without added sulfur or the addition of any oenological product. After natural decantation in barrels and light filtration, the wine will then be ready for bottling.

The two brothers Ludovic and Emilien joined forces in 2006. By gradually taking over vines in Côte and Hautes Côtes de Beaune, they naturally continued the work started by their parents Elisabeth and Christophe who were already established on the historic plots of the estate. . After making wine for four years on the family farm in Bonnencontre, they had the opportunity to set up in a vat room in the heart of the vineyard, in Saint Aubin. Their objective: to transcribe as faithfully as possible the influence of the terroirs on the wines while respecting the vines and the soil. They have moved towards natural vinification without sulfur and the non-use of oenological inputs.
