Delightful glow a pale-yellow gold in the glass. On the nose this wine has notes soft floral, citrus fruits and hints of buttered toast. The palate is richly with flavours of peach, apricot and subtle mineral notes. It is pure and crisp with bright acidity and good length on the finish.
The ‘Clos Bortier’ vineyard sits at an altitude of 428 metres above sea level, and overlooks the village of Saint Aubin. The vines face south-west and are Guyot-trained. Fermentation using only wild yeast took place in a combination of stainless steel and oak barrels, of which 30% were new. The wine was aged for nine months before bottling. The wines are, in the best sense of the phrase, ‘low intervention’ wines, with each expressing the character of its site.
This famous domaine has been run by Caroline Lestime, Jean-Noel’s daughter, since 1989. Its 12.5 hectares of outstanding vineyards have been certified organic since 2014, and are now run biodynamically, though are not yet certified as such. Most of the estate’s vineyards are in the heart of Chassagne, with one vineyard in the Hautes Côtes de Beaune, which looks down on St. Aubin and was planted in 2015.
