All the grapes are sorted. For the reds, they are destemmed and vatting lasts 18 to 20 days, one punching down per day.
The whites are pressed and settled then ferment in barrels.
Etienne Delarche operates a 9 ha family estate in the communes of Pernand-vergelesses and Aloxe-Corton.
It was Marius, the grandfather who took over the vines from his wife Jeanne in the 1950s. Then his son Philippe, in 1987, gave new impetus by planting new plots and building a vat room-cellar complex on 3 levels. It was after his death in 2008 that Etienne settled down.
