Domaine Dominique Gruhier, Bourgogne Epineuil 2018

The grapes used to make the Bourgogne Épineuil come from vineyards planted on Kimmeridgian limestone-clay soil dating from the Jurassic period 145 million years ago. A soil that is full of oyster fossils!

The pinot noir grapes are 80% destemmed before the fermentation process. The 20% whole bunches add another layer of fruit concentration and spicy notes to the wine. Bourgogne Épineuil is aged for 10 months in 228L old French oak barrels in the beautiful 800-year-old cellar along with the rest of the range.

Dominique Gruhier makes beautifully distinct, Pinot Noirs in Epineuil a village close to Chablis. Along with Kimmeridgian limestone there is also a lot of clay in the soils here, which is brilliantly suited for Pinot Noir. It was in 1989 Jean-Paul Gruhier had the opportunity to take over the Abbaye du Petit Quincy, also called the Château d'Epineuil. Passionate about heritage and art, this magnificent place but in poor condition is a major challenge for Jean-Paul and Malou his wife. In 1990 Dominique took over 4.5 ha of vines and joined his parents at Petit Quincy where he reinvested in the outbuildings with a view to restoring them to their initial destination of Cellier.
