Domaine de Chevillard, Savoie 2021

The white varieties (Jacquere, Altesse, Chardonnay, Mondeuse Blanche) are pressed very gently using an old Coquard press (widely used in Champagne for the quality of extraction) and fermented directly in oak (large & small barrels).

Matthieu has an old school approach, with wines being racked only once before bottling and a minimum amount of sulphur is added at that time.

From 2020, all his wines will be bottled straight from the barrel, and only after they have matured for at least 24 months. 

Sitting in the French Alps, the Domaine de Chevillard is an organic vineyard of approximately 6 hectares in the heart of the Combe de Savoie Valley. Matthieu Goury is a passionate and committed young winemaker running the estate and producing exclusively white and red wines with the Protected Designation of Origin (AOP) Vin de Savoie and Roussette de Savoie. The estate grows a range of grape varieties, primarily from the Savoie region: Mondeuse for the reds and Jacquere, Altesse and Mondeuse blanche for the whites (even though the Pinot Noir and Gamay grape are also part of the vineyard).

His first vintage was in 2016. Mattieu Goury has been awarded “Discovery of the Year” in 2019 by France’s most prominent wine publication La Revue de Vin de France. Savoie and Matthieu definitely have a bright future.
