Delivery Information

Saint-Bris-le-Vineux village is located between Auxerre and Chablis on the Yonne valley on Kimmeridgean soil: a strata from the Upper Jurassic era around 145 million years ago.

Harvest at optimum maturity, destemming, sorting, skin maceration for a few hours and pneumatic pressing. Vinification in stainless steel tanks. The natural alcoholic and malolactic fermentations are controlled at low temperatures and carried out at 100%. Aging is carried out for 8 to 12 months in stainless steel tanks before filtration and bottling.

Daughter of Burgundy, Clotilde Davenne grew up in the countryside, at the foot of the Morvan. It was during her childhood surrounded by nature that her sensitive approach to the world was forged. Everything was there in abundance aromas, flavors, colors, in a mixture of sensations experienced every day. This natural sensory lesson Clotilde now cherishes and uses everyday in her making wine profession.
