The Clotilde Davenne Chablis comes from the village of Courgis, right next door to her winery in Prehy. The juice is fermented at a low temperature in stainless steel vats, with natural yeasts. The wine then rests for 8-12 months before bottling
Daughter of Burgundy, Clotilde Davenne grew up in the countryside, at the foot of the Morvan. It was during her childhood surrounded by nature that her sensitive approach to the world was forged. Everything was there in abundance aromas, flavors, colors, in a mixture of sensations experienced every day. This natural sensory lesson Clotilde now cherishes and uses everyday in her making wine profession.
