This is one of the rare rosé Champagnes produced by a short maceration of the grapes of Pinot Noir, and 10% Chardonnay. This gives it lightness and delicacy. Serene berry fruits awaken your taste buds, and finally leave you with delicious flavours of cherry and strawberry coulis on the palate. Perfect for a special occasion or a relaxed aperitif.

Didier Gallimard owns 10 hectares of prime vineyards on the steep slopes around Les Riceys in the southern Aube. Didier's son Arnaud has joined him, becoming the seventh generation, and the long term future is now secure. His vines average age is over 30 years and the dramatically sloping vineyards, which are of chalk and Kimmeridgian limestone, are planted mainly to Pinot Noir and just a little Chardonnay. His wines are full and rich and offer enticing aromas and flavours of summer fruits. His rich exotic Rose is produced in very limited quantities. Cuvee Quintessence is 100% Chardonnay, aged entirely in old wood and with a dosage of just 5g/l. Rich, round and decadent. Cuvee Amphoressence is a blend of 50% Pinot Noir, 50% Chardonnay, aged for 24 months in four amphorae and bottled with no dosage. This is very fine and pure and rather serious.
