This lovely aromatic, zippy and fresh unoaked Spanish Chardonnay has aromas and flavours of pears, pear drops, a hint of pineapple and sea spray. Reminiscent of old vine Macabeo, but drier, brighter, stonier, with steely mineral notes. It reminds some of our tasters of a good St Veran.
The D.O. Valencia vineyard is located in Risky Grapes' Conejeros estate, which is situated 840m above sea level, towards the interior of the province of Valencia. The soil is chalky/sandy and calcareous. Each plot and/or variety is fermented separately. Destemming and gentle crushing is carried out on a cluster sorting table. Cold maceration takes place at around 6° for 4-8 hours depending on plot or variety. After being transferred to temperature controlled 25-50hl stainless steel tanks, the must is fermented at 10-17° using native yeast. The wine is aged in stainless steel tanks, with a fine sediment included.
