Pale golden hue with fine, persistent bubbles forming a delicate mousse. Bright orchard fruits such as green apple (Granny Smith) and citrus, notes of lime and grapefruit, subtle herbal accents and a faint layer of pear‑and‑quince.
The mousse is creamy yet lively. Fruit returns cleanly with crisp apple and pear, layered with lemon zest and a whisper of anise/herbal complexity. Excellent minerality underpins the structure, giving the wine a fresh and taut profile. The finish is long, elegant, and slightly savoury, making it both refreshing and refined.
