The soil in this region is chalk/limestone based, and provides the perfect conditions for growing Palomino, Pedro Ximénez and Moscatel - the three traditional grapes for sherry.
Extremely food-friendly and versatile, a wide range of Sherry exist - from dry (Fino, Manzanilla, Amontillado, Palo Cortado, Oloroso Seco) to more luscious and sweet (Oloroso, Pedro Ximenez).
