The D.O. Valencia vineyard is located in Risky Grapes' Conejeros estate, which is situated 840m above sea level, towards the interior of the province of Valencia. The soil is chalky/sandy and calcareous. Each plot and/or variety is fermented separately. Destemming and gentle crushing is carried out on a cluster sorting table. Cold maceration takes place at around 6° for 4-8 hours depending on plot or variety. After being transferred to temperature controlled 25-50hl stainless steel tanks, the must is fermented at 10-17° using native yeast. The wine is aged in stainless steel tanks, with a fine sediment included.

From the choice of vineyards and the varieties that are cultivated within them, to the quality of the soils that use natural vegetable cover and other ecological practices, and the struggle to bring back native grape varieties such as the Bobal and Merseguera, their passion lies in bringing to each bottle of wine a perfect reflection of the geography and climate which we and our vineyards call home.
