On the nose, it’s layered and complex, think ripe stone fruit and citrus from the stainless steel fermentation, balanced by a distinct salty, mineral edge brought out by ageing in amphora. There’s also a subtle touch of toasted oak in the background, adding warmth and depth without overpowering. As it opens up, you’ll pick up notes of wild herbs and Mediterranean scrub, a nod to its coastal origins.
On the palate, it’s generous and juicy, echoing the warmth of the vintage. The wood adds a gentle softness and roundness, while the amphora brings a clean, saline finish. Vibrant acidity keeps everything lively and well balanced, with a long, savory finish.
Pairs beautifully with seafood, especially grilled fish, shellfish, or even a seafood risotto.
