Karavitakis Liatiko “Indigenous Yeast” is a refined red wine from Crete, Greece, made with a low-intervention approach that highlights the character of the native Liatiko grape.  It displays a light ruby hue and an expressive nose featuring notes of strawberry, cherry, dried herbs, and tea. This wine comes from a small-batch project centred on low-intervention methods and a clear sense of place. Fermentation relies on naturally occurring yeasts, with grapes often sourced from older or ungrafted vines. The approach in the cellar is gentle, using techniques like whole-cluster fermentation and careful manual handling, while keeping filtration minimal and oak influence subtle to maintain freshness and clarity.

Karavitakis Winery is a family-owned estate based in the Kolymvari area of Chania, Crete. With roots going back several generations, the modern winery was established in the late 1990s by Manolis Karavitakis and is now run by the next generation. The estate focuses on both indigenous and international varieties, with a strong emphasis on expressing Cretan terroir through careful vineyard management and low-intervention practices
