This was elegantly smooth - both on the nose and on the palate, with aromas of black cherry, crushed black pepper on the nose, and wafts of cured, hanging meat from the pantry. Mistral is part of France's most exciting co-operative. This co-op has an artisan approach to winemaking; rather than blending everything together, members' grapes are vinified separately, highlighting the individual terroir of each of the 10 estates.�Everything is minimally intervened with; no new oak, no added sulphites and no cultivated yeasts, so you get a fantastic expression of the highly quality fruit.
