All the fruit was picked in the early morning hours, destemmed and left to cold soak for three to five days. Maceration on the skins lasted between 14 and 21 days after which the wines were pressed to tank and transferred to barrel for aging. All vineyards we vinified separate. The wines were aged in mostly neutral oak for 18 months. No fining or filtration were done before bottling.

Notary is the side project of winemaker Ernst Storm who's a bit of a superstar in the wine world. Originally from South Africa he is now settled in California and makes this top quality juice in a modern, fresh and approachable style. Notary Public means "let the people decide" focusing on varietals grown in the Santa Ynez valley near Ernst's home, unstuffy and authentic. These are wines that show the possibility to make fresh, bright, approachable wines of immense pleasure and without the price tag of Napa Valley or Sonoma.
