Grapes are all destemmed. Prefermentive maceration at 5degrees for 5or 6 days. Grapes are crushed before fermentation in 100 hl pol Sweetter or stainless steel tanks. Uses Als and CIB yeasts but no enzymes or acidification. Chaptalised with MCR of Colombard. Alcoholic fermentation of 10-12 days and no malo. Each grape variety vinified separately An �levage on fine lees of 3 months after which the finished wine is kept in cuves and bottled 4 to 5 times a year. Bottled at the domaine using their own bottling line after filtration by plaque.
