The vines are pruned in the traditional 'stick and thumb' method (vara y pulga) and face due south to the sea to benefit from on-shore breezes that cool and bring humidity to the vines. The soil has a high content of Albariza (chalk & limestone), which helps retain moisture during the hot dry summer. After hand harvesting the grapes are transferred to the winery for pressing, the press juice is fermented at warm temperatures (around 25 degrees) for around 12 days to give a fairly neutral, dry base wine at around 11% alcohol. This base wine is fortified to 15% abv and then spends around 3 years ageing under flor, it is then re-fortified up to 21% and ages oxidatively for a further 17 or more years before being bottled unfiltered (the sherry may be slightly hazy when poured from the bottle).
