Description

A lighter and more refreshing style of Pouilly-fuisse than Eric is usually known for. A delicate apricot and stone-fruit character with a hint of orange peel and acacia honey, which continue onto the palate with crisp minerality, great length and perfect balance. An extremely elegant wine.

Made from a blend of grapes from each of his Pouilly-Fuisse vineyard sites “Les Crays” is a land of limestone boulders on the blue marl Pliensbachian. Located on the southern side of Vergisson hill, it benefits from great sun exposure and is protected from northern cold wind, producing a refreshing mineral wine rich with multiple citrus flavors. The vines were planted between 1930 and 1966. in addition The marn soil of “La Cote” brings power and minerality to the structure as well as length in the mouth. The clay-limestone combination of Tillers brings finesse with citrus fruit. The grapes are hand picked and gently pressed. The wine stands on its lees for less than the standard ten to fifteen months inside oak barrels with reduced doses of sulfites to produce a lighter and more fresh style. The wine is then personally bottled using gravity and often unfiltered.

At the head of the vineyard, handed down from father to son for eight generations, Eric Forest produces, on vineyard plots planted between 1930 and 1979, seven confidential cuvees from Pouilly-Fuisse, Saint-Veran, and Macon-Vergisson.
He forged a philosophy of the vine under the influence of his grandfather, who passed on his knowledge of Nature and Biodynamics. He does all the work manually to be rigorously precise. It begins with a short stature to provide aerated feet and minimise pest control products. It then struggles ecologically against the competing plants of the vine by doing complementary plowing that makes the soil live and require the roots to tap into the deep wealth of the soil. The bunches are picked by hand and gently pressed. There begins the vinification. An extreme care brought to all the stages of the elaboration of the wine, pledge of a quality product of the soil, fruit of his passion.
