The Domaine Long-Depaquit, Chablis Premier Cru Les Vaucopins 2017 has vanilla custard on the nose, while on the palate it is lively, steely with a ripe, juicy, sweet lemon core. The Chablis Premier Cru Les Vaucopins from Domaine Long-Depaquit pairs well with seafood, scallops, fish and white meats, but can also be served as an aperitif.
Vineyard: Les Vaucopins is a 5.2 heactare Premier Cru located on the right bank of the Serein River, in the commune of Chichee, 3 kilometres east of Chablis. Its terroir has an uncanny resemblance to the Grand Crus: southern exposure, steep slopes and numerous outcrops of Kimmeridgian chalk. Consequently, the subsoil lends these wines a very specific personality. With its noble origin and often warmer than average conditions for this terroir, this high-end Premier Cru has definite promise and potential.
Winemaking: The grapes for the Domaine Long-Depaquit, Chablis Premier Cru Les Vaucopins 2017 are hand-picked. They are then fermented in stainless steel vats (85%) and in 1 to 4-year-old oak barrels (15%). Final ageing took place in stainless steel vats, including two months on the fine lees. The wine can be drunk now, but could also be kept for five to ten years, provided the storing conditions are right.
Chateau Long-Depaquit is located at the heart of the village of Chablis, in Burgundy’s Yonne department.
The 65 hectares of vineyards benefit from a sustainable approach to viticulture. Limiting yields and keeping interventions to a minimum during the vinification process help create authentic, mineral, elegant wines. Barrel ageing is used in moderation to best preserve the expression of each terroir.
To improve the quality of the wines by giving them more purity and precision, a new, more eco-friendly winery was built at the estate in 2014.
