The Couly family have been growing grapes here for nearly a century and replanted their finest vineyard, the Clos de l�Echo, shortly after WWII. It lies opposite the town�s impressive 12th century fortress.The Gravi�res is from the sandy and gravel soils, the grapes are de-stemmed and vinified on the skins for 15 days with indigenous yeasts. The wines are aged in stainless steel tank and bottled the following spring. The grapes of the Baronnie Madeleine cuvee are sourced from the south facing slopes and plateau of the appellation. The grapes are de-stemmed and vinified on the skins for 2 to 3 weeks with indigenous yeasts. The wines are aged in stainless steel tank and bottled the following summer. The Clos de l�Echo is a 15 hectares, south facing single vineyard at the highest point of the appellation that has exceptional terroir of clay and limestone. The vines are between 80-100 years old which has allowed the roots to grow exceptionally deep. The wines are vinified and aged in stainless steel. The grapes are vinified on the skins for 3 to 4 weeks and are bottled the following autumn.
