Description

With floral and mineral notes, a subtle iodine nuance and a beautiful tension, this Premier Cru is the perfect illustration of the typical minerality of a Chablis. Gun flint and saltiness are the reflection of a soil full of stones and fossils. A lively and elegant wine with a great aging capacity. Serve it with fish, poultry, and white butter or cream sauces.

For this Premier Cru, Bernard Defaix cultivates 8 hectares on the slopes of the village Milly on the right banks of the river Serein. Defaix is one of the biggest owners of this cru. When some of the plots were planted, they found impressive fossils of that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. The alcoholic fermentation takes place with natural yeasts. The Cote de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Didier Defaix comes from a long family tradition of vine-growers and is the son of Bernard Defaix. All aspects of production, from the vineyard to the winery, are undertaken by him and his family. For many years they have moved towards a sustainable and more ecological way of farming - which has resulted in them becoming fully organic, however not certified.
