From organically farmed grapes on Provencale hillsides. The grapes are given a short cold maceration, fermented in stainless steel and remain on the fine lees for a period so that the wine acquires a greater vinosity.
Located on a hillside, right on the border of the valley of Cuers and Puget Ville, the Saint-Martin vineyard is situated in a beautiful location. The vines are situated on a clay and calcareous ground with calcite, quartz and sandstone). To preserve this extraordinary potential, Guillaume Enzo Fayard concentrates on quality viticulture, respecting the environment and nature, without recourse to chemical products (pesticide, fertilizer, weed killer).
