This Blanc de Blancs is dedicated to Jean Fanniere who decided in the 50s to stop selling his grapes and produce his own Champagne instead. The vines in the Grand Cru area that were used at the time are still the ones used for this wine.

Aged for five years in bottle, it has real intensity and a broad mouth filling structure. Aromas of green apple, hints of flint and smoky minerality along with sweet pastry and bread dough. Enjoy it on its own, with oysters or fish. Dosage: 3g/L (Extra Brut)
