Les Freres Mignon, L'Aventure Grand Cru NV Extra Brut

Each of the wines is demarcated by village, except for L’Aventure, which is a blend of Chardonnay from Cuis, Avize, and Cramant. Florent deploys and precise but restrained approach in the cellar, using only around 1.5-2g of dosage, and only adding SO2 directly after harvest, never during any other phase of production. After pressing, the juice is transferred into French oak (225l barriques and 600l demi-muids), where the wines undergo natural fermentation and are then left to age for around 1 year. The wine is then bottled and left to age for roughly 2 years in bottle before disgorgement release.

Les Freres Mignon is a new project from brothers Florent and Julien Mignon, based in the village of Cramant, which sits at
the northern extent of the Cotes des Blancs, the epicenter of Chardonnay production in Champagne. The brothers had the
good fortune of having vines in some of top villages in the area passed down to them from both sides of the family: their
mother’s side handed them vines in the prime Grand Cru of Avize, and their father’s side bequeathed them with terroirs in
Cuis, Cumiers, and Cramant. Quite the murderer’s row of crus with which to start a new domaine! Florent manages the cellar while Clément focuses on managing the considerable work in the vines, all of which is now done organically
