Aromas of red plum and hints of cherry, liquorice and spice. The palate has fresh tannins and a lovely acidity leading to a lingering finish. Pair with a chicken dish that has a little Chorizo.
Comando G Mataborricos comes from vines aged between 50 and 80 years old. These are old strains planted in sandy soils weathered from granite, slate and quartz and lying in a mild and humid microclimate. They are cultivated using environmentally friendly agriculture and organic treatments, and the harvest is carried out manually when the grapes reach optimum ripeness.
The wine is made following a philosophy of minimal intervention. Firstly, the bunches are fermented whole with native yeasts in open oak vats and with a slow maceration. The wine is then aged in cement jars for around 12 months.
The Comando G project was set up in 2005 by three winemaker friends who shared a passion for Garnacha and saw a great opportunity to get the best out of this variety in the Sierra de Gredos. "G" in the name is inspired by the Garnacha variety and the Sierra de Gredos.
