Mario Rovira 'Tosca Cerrada', Palomino Fino En Rama '7 Meses', Vino de la Tierra de Cadiz, Spain, 2016

About this wine

Mario Rovira has worked with the Palomino Fino grape variety (best known for its use in Sherry) in Bierzo for some time. He recently set out to understand the grape in its native land, collaborating with Bodegas Delgado Zuleta in Jerez. The grapes were grown on the classic 'Albariza' soils and the resulting wine was placed into the traditional Sherry barrels: 'botas'. The wine aged for 7 months in these barrels, four of which were under flor like a sherry. The result is a wonderfully unusual wine with some of the nutty savouriness of a sherry but with more fruit and a lighter, non-fortified alcohol level.
