About this wine

100% Savagnin.
Ganevat favors using large vats and humid cellars for his oxidative wines. This traditional approach is directly opposite to the rest of the Jura where small barrels and dry cellars are the norm. He feels that he can obtain much more refined, elegant wines in this way. Cuvée Prestige is a veil-wine cuvée which he releases before the minimum time for the Vin Jaune Appellation (6 years and 3 months). Lively salty, minerally, tangy nose that's complex and sherried, but very fresh. The palate is lemony, herby, tangy and intense. So fresh and bright with some appley, nutty depth. Warm, long, rich finish.
