Chile does do Cabernet very well – plenty of ripe black fruit – typically blackcurrant from Cabernet , crisp acids and supple tannins – none of the astringency we associate with the grape in Bordeaux where it’s usually blended with Merlot to soften it up. No need for that in Chile as the 320 average days of sunshine every year are more than enough to ripen the grape to perfection. Drink with a Sunday roast, a lasagne or even on its own.
